Does anyone know if there are any smaller options than 3 inch diameter rv dump hoses ? I dont want a big fitting under the van too easily damaged .

I believe 3" is the only standard for black water, but you can build a set with macerator pump.
Those pumps works well, when they do, but quite easy they become nasty business.
In my setup, the hose connector and valve were in line with the tank, so they did not stick more, than tank.

If it’s just grey water, you can use pretty small diameter hose with a camlock and a ball valve or similar. It seems most DIYers use a cassette or composting toilet so no black water to deal with.

This is a typical commercial setup, with the valve at just below the level of the grey tank. The black tank is much higher.

The smaller host bib connection is sufficient for grey water. If you have the black tank seperate and higher up, the larger dump connection can be higher that a tank, so notas unprotected. There is a lot of room underneath to put tanks and they can be mostly up higher than the chassis rails.

As you can see, black dump valves always eventually leak, macerator or not. Be ready for a dirty job at some point.

Cassette or composting toilets have their own issues. There is no perfect solution. I replaced some with soft PVC fittings. At least if it hits something, it will rip away and not take out other stuff and can be easily replaced.
